Bratwurst with Spinach & Blueberries

I like to quote Pulp Fiction to explain my eating habits:

“…my girlfriend’s a vegetarian. Which more or less makes me a vegetarian, but I sure love the taste of a good burger.”

So when I do eat meat, I make it count. Luckily, I now live within cycling distance of Central Market, but I still don’t have a basket to haul groceries home, so my brats rolled with me in the Buick this time. CM makes their bratwursts spicy with big chunks of chicken and pork.

Sigh, they’re breathtaking…

I had one in the fridge and decided I’d better cook it up soon. About halfway through, I started thinking about something on the side. I noticed a box of baby spinach, a pint of blueberries, and some leftover vinho verde (the one with the crab on it, it’s delicious). Once the sausage was done I put it on a plate, poured the excess grease from the pan and threw in the berries with a splash of wine. I threw the greens in last, tossed it around, and I grabbed the camera to do my best Smitten Kitchen impression.

Caprese

I had some leftover grape tomatoes so I sliced them and tossed them with parmigiano reggiano, olive oil, salt and pepper, and some basil from my balcony. As you can see, my sister’s camera is badass.

By far this one of my favorite things to do with tomatoes. Before the summer ends I want to go to a farmer’s market, get some ripe heirlooms and do the same, but add some chopped red onion and a squeeze of lemon.

Ratatouille in Crepes with Fresh Goat Cheese

Saw this, then this, ate here last weekend, then Sarah and I made the following…

Sarah's Pan, Before

Beau's Pan, Before

Sarah's Pan, After

Beau's Pan, After

Crepe

Perfection!

Now go make your own.

EDIT: That’s fresh Texas goat cheese in there with the ratatouille.
